Hot Sauce for the Brochettes:

Pound in a Mortar:

  • 1/2 head garlic, peeled
  • 5 tblspns parsley, minced
  • 1 tspn cumin seed, crushed
  • 1 tspn hot red peppers
  • 1 tspn sweet red pepper

Blend Together:

  • 1/2 cup lemon juice
  • 1/4 cup olive oil
  • 2 cups water
  • salt to taste
  • 1 lemon (or lime) including rind, diced very fine. If preserved lemon is on hand, use that .

Combine both mixtures. To add an extra touch, toss in 1 cup black or green olives. Serve in a bowl at the table.
