Try Zoodles Instead!

I love spaghetti and when I committed to eating less carbs I thought I had given up a favorite for good. Luckily, I found out about Zoodles, noodles made from the flavor-friendly zucchini. Here’s how I do it.

The first thing you need is a way to make the noodles. A mandolin slicer works fine, but I thought it was a hassle to drag mine out, put in the right blade, then have to clean it up. I found this nifty hand peeler at New Seasons and have never looked back!

It’s super easy and in fact takes less time than boiling the traditional noodles.

Just cut the ends off the zucchini.

 

 

 

 

 

 

 

 

 

 

Use the peeler to shred the zucchini into “noodles.” Stop peeling when you get to the seeds. I just cube the core and set them on top of my zoodles. Microwave for 2 minutes for al dente perfection.

 

 

 

 

 

 

 

 

 

 

 

 

Just top with your favorite sauce and yep, it’s spaghetti!
